When participants were following the “fermented stage” of the study, cholesterol levels decreased within the body. The users also held increased metabolism of carbs. Overall, individuals also lost weight during the time period of adding the fermented kimchi to the diet.
The Journal of Bioscience & Bioengineering also published a study related to fermented foods. Foods were tested at different stages during the fermentation process. It is noted foods which fermented longer including kimchi, held higher levels of antioxidants. Antioxidants help to create a “healthier system” within the body through fighting and preventing free radical damage.
